DIY Chipotle Chicken Taco Bowls!

Every time I go to the mall, i need to get me some Chipotle, its quite addicting!  But lets be honest, it isn’t cheap!  I decided  to learn how to make that $18 dish at home and of course, add my own twist to it!  Below is everything you need to know to make the best DIY Chiptle and its so healthy!

Ingredients:

4 Boneless Chicken Breasts
3  Avocado’s (for guacamole)
1 garlic clove
1 can of Heinz Breakfast Beans- Chipotle flavour
1 can of Corn by Complements
1 tub of low fat sour cream
1 head of romaine lettuce
1/2 an onion (optional)
1/2 brick of marble cheese
1 package of Picco de Gallo by Sensations
1 Glass of brown rice
TOP NOT SO SECRET INGREDIENT: 1 package of Just Add Juice’s- Mexican Fiesta Seasoning

Total Cost: $31.42 for 6 full servings ($5.24 serving)

Preparation:

Place the boneless chicken breasts in a large crock pot and set on high speed.  Mix the seasoning with half a glass of orange juice and toss that into the crock pot.  Let the chicken sit for 3 hours.

While the chicken cooks, prep the following:
* cut 3 alvacado’s into little cubes and place them into a large bowl.  Great the garlic into the bowl, add in 2 TBS of lemon juice and mix.  (Add salt and pepper to your liking).  Place the mixture into the fridge

* Cook the rice for 15 minutes (5 minutes high heat and 10 minutes low heat)

* Cut the head of lettuce and place into the large bowl and place in the fridge

* Dice the onion and place in the fridge

* Shred the marble cheese and place into the fridge

* Once the chicken in fully cooked, separate it with two forks in the croc pot.  Remove the rest of the juice and place the seasoned/cooked chicken into a bowl

* Place the corn and beans (in two separate small cooking pans) and cook for 3-5 minutes on medium heat

 

Assembly:

In 4-6 large salad bowls, place each of the following in the order mentioned below:

* Shredded lettuce
* Rice
* Beans
* Corn
* Shredded  Chicken
* Guacamole
* Sour Cream
* Onion
* Cheese
* Pico De Gallo

Total Time:

3 Hours to cook
20 minutes of preparation
5 minutes to assemble
